Tomatoes in cheese tempura


Ingredients:

- 4 firm tomatoes
- dried ground sweet pepper
- 2 garlic cloves minced or grated
- black pepper
- 9 oz grated cheese
- 2 tbsp. mayo
- 2 eggs
- oil for frying 

How to:

1. Put the tomatoes for some seconds into boiling water. Peel
the skin off. Cut in circles, sprinkle sweet pepper, garlic, black pepper and a bit of chilli pepper.
2. For the cheese tempura batter: beat up 2 eggs, mix them with 2 tbsp. of mayo, add grated cheese and mix once again. You may also add salt, but there is enough salt from cheese and mayo. 
3. Heat a frying pan, add oil. Dip the tomato slices in the tempura batter and with the help of a spoon put them in the pan. Fry until golden brown.
